The move is being billed as \u201c99 London 2.0\u201d, a redesigned flagship version of the brand, with elevated design, <a href=\"https:\/\/tourismag.com\/articles\/100740\/99-sushi-bar-restaurant-to-open-in-mayfair-london-a-new-chapter-for-the-award-winning-japanese-maison.html\">new creative direction, and a scaled-up menu<\/a>.<\/p>\n\n\n\n<p>The interior design is led by M\u00f3nica de Hostos (Borco Group), under a broader creative oversight from 99\u2019s CEO Jaime Castaneda. <a href=\"https:\/\/www.factlondon.com\/food-london-united-kingdom\/fact-exclusive-99-sushi-bar-and-restaurant-is-heading-to-london\">Expect dramatic material choices<\/a> &#8211; black marble with ink-like veining, emerald and sable limestone, crimson velvet banquettes, moss walls, sculptural chandeliers\u2014and spaces crafted for both theatre (outdoor terrace, sushi counter) and intimacy.<\/p>\n\n\n\n<p>On the culinary side, the concept leans into 99\u2019s signature strengths: sustainable, season-led Japanese fare with standout dishes including Atlantic bluefin tuna in various forms (flamb\u00e9ed nigiri, tartare), robata skewers, carpaccios, and other creative plates blending precision with indulgence.
